Judah Smashes the Cake!

What a fun morning! Little Judah visited this morning for a one year old “Smash the Cake” session. He and his mom are in visiting from Grand Prairie Alberta and I’m so glad they had time to come by the studio for the session. I haven’t seen Judah in almost a year and he has changed so much! I think he quite enjoyed his visit as well and I believe this may have been his very first taste of cake! His mother Leah, made a conscience choice to bake a healthy Sugarless Carrot Cake for the session. I thought for you reader’s out there who love to try new recipe’s, I ‘d share with you her recipe posted just below the images-Enjoy Judah’s responses to the session!

This has been the BEST morning!

Sugarless Carrot Cake

Cake: 2 1/2 cups peeled carrots shredded

2 1/2 cups frozen concentrate Apple juice

1 1/2 cups raisins

2 cups whole wheat flour

1/2 cup wheat germ

2 tbsp. baking powder

1/4 cup canola oil

2 eggs & 4 egg whites

1 tbsp. vanilla

3/4 cup unsweetened applesauce

Combine carrots, 1 cup& 2  tbsp. apple sauce into pot and bring to a boil. Reduce heat and cook till carrots are tender. add raisins and Puree. Cool. Combine dry ingredients with 1/4 cup apple concentrate, oil, eggs, vanilla. Fold in carrots and applesauce. Makes 2 round cakes. Bake at 350C 30-40 min. Frost with cream cheese Icing.
